Sweet & Sour Chicken Cutlets
The R.W. Knudsen Family® products used in this recipe:
Ingredients:
- 3/4 cup brown sugar
- 2 tablespoons cornstarch
- 2 cups R.W. Knudsen Family® Orange Mango Juice
- 1/4 cup balsamic vinegar
- 2 tablespoons grated gingerroot
- 1/4 teaspoon salt
- 1 pound chicken cutlets
- 2 tablespoons olive oil
- 2 cups cooked rice
Directions:
- In a medium saucepan combine brown sugar and cornstarch.
- Stir in juice, vinegar, gingerroot and salt.
- Cook until thick and bubbly.
- Brown 1 pound chicken cutlets in 2 tablespoons olive oil.
- Add sauce to pan with cutlets.
- Simmer 5-10 minutes, or until cooked thoroughly.
- Serve over rice.
