Sweet & Sour Chicken Cutlets

The R.W. Knudsen Family® products used in this recipe:


Ingredients:
  • 3/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 cups R.W. Knudsen Family® Orange Mango Juice
  • 1/4 cup balsamic vinegar
  • 2 tablespoons grated gingerroot
  • 1/4 teaspoon salt
  • 1 pound chicken cutlets
  • 2 tablespoons olive oil
  • 2 cups cooked rice

Directions:

  • In a medium saucepan combine brown sugar and cornstarch.
  • Stir in juice, vinegar, gingerroot and salt.
  • Cook until thick and bubbly.
  • Brown 1 pound chicken cutlets in 2 tablespoons olive oil.
  • Add sauce to pan with cutlets.
  • Simmer 5-10 minutes, or until cooked thoroughly.
  • Serve over rice.
