Very Veggie Gazpacho

The R.W. Knudsen Family® products used in this recipe:


Ingredients:
  • 1 quart R.W. Knudsen Family® Spicy Very Veggie® Juice
  • 1 medium seedless cucumber
  • 3 stalks celery
  • 3 green onions
  • 3 medium tomatoes
  • 1 cup loosely packed cilantro plus 6 sprigs
  • 2 tablespoons lemon juice
  • 1 large clove garlic, chopped
  • 1 teaspoon chopped jalapeño (optional)
  • Salt and pepper, to taste
  • 1 avocado, for garnish


Directions:

  • Finely chop the cucumber, celery, onions, tomatoes and 1 cup cilantro; combine in a large bowl.
  • Place half of the vegetables, the garlic and half of the Spicy Very Veggie® Juice in bowl of a food processor.
  • Add jalapeño if desired.
  • Process until smooth.
  • Return the mixture back to the bowl with the remaining chopped vegetables, and add remaining Spicy Very Veggie®, lemon juice, salt and pepper.
  • Chill well before serving.
  • To serve, pour gazpacho into soup bowls and garnish with sliced avocado and sprigs of cilantro.
